We eat food for breakfast. What the hell do you eat?
Seriously, the vegan breakfast options are really wide open.
- We don’t eat eggs, but we do eat tofu scrambles. I’m really bad at making these, but mostly, you fry up tofu like scrambled eggs, and you put in veggies and vegan cheese and such. You’d never know it’s tofu by taste.
- Pancakes, waffles, and french toast can all be made without any eggs or dairy. I save the last slices of every loaf of bread in the freezer, and when I have a nice stack, it’s french toast for breakfast on Sunday.
- Oatmeal. Oh, my gosh, do I eat a lot of oatmeal! I like mine with raisins and fresh cranberries, and a little bit of almond milk. Yummy.
- Cereal and non-dairy milk. There are so many types of non-dairy milk on the market now, that it’s easy to swap out the cow juice for, say, soy, or almond, or coconut, or hemp, or whatever kind of milk you like.
- Peanut butter toast. Quick, easy, and filled with protein if it’s made with multi-grain bread. This is my favorite “I don’t know if I’ll get lunch today” breakfast, because it’s very filling, and doesn’t wear off quickly.
- Avocado toast. As long as the bread isn’t made with honey, and contains no eggs or dairy, you’re good to go. I make my avocado toast on flax bread or flax crackers, with a thin layer of tahini and a little nutritional yeast under the avo, and some freshly ground black pepper on top. Delicious.
- Anything wrapped in a tortilla. This might just be a breakfast option at my house, but honestly, any beans or grains leftover from last night’s dinner, plus a little veggie cheese or salsa, and a fistful of greens, wrapped in a flour tortilla. Portable breakfast that’s warm and filling.
- Soup, salad, and leftovers. Lots of vegans stop thinking of foods as specifically for breakfast, lunch and dinner, and just eat whatever sounds good for breakfast. Veggie soup with bread? Sure, why not!
- Smoothies. My favorite smoothie recipe is a banana, an apple, and some vanilla almond milk, whirled with a fistful of raw spinach. I drink half today, and put the rest in the fridge for tomorrow.
