I’m always on the hunt for crunchy snacks, which are a challenge when your diet doesn’t include grains or potatoes. These simple crackers hit the spot, thanks to the chia seeds, which give them that extra crunch.
About the Ingredients
Coconut flour is very absorbent, which is why there’s so little of it used in comparison to the water. Do not substitute any other flour, or the recipe will end up being too wet.
Chia seed turns into a sort of gel when combined with water. The seeds are what hold these crackers together. Don’t omit them, or sub other seeds, or you’ll end up with crumbs.
Coconut oil tends to solidify when it cools. Melt it, then make sure the water you use is hot, so the oil doesn’t turn into chunks of solids before it goes into the oven.
I seasoned this recipe with garlic powder and nutritional yeast, but you can sub other dry spices if you wish. Do not use fresh herbs. They’ll add more moisture, which will keep the crackers from drying properly.
Ingredients
1/2 cup coconut flour
1/4 cup chia seeds
1 TB garlic powder
2 TB nutritional yeast
1/4 tsp salt
1/4 cup coconut oil, melted
1 cup hot water
Directions
- Preheat oven to 375°.
Line a 9×13 baking sheet with parchment paper. - In a medium bowl, combine the dry ingredients: coconut flour, chia seeds, garlic powder, nutritional yeast, and salt. Mix well.
- Add the coconut oil and hot water to the dry ingredients, and mix well. Let the bowl sit for five minutes.
- Turn the contents of the bowl out onto the parchment lined baking sheet. Press the dough into a thin layer, using your hand or a spoon, until it fills the entire baking sheet.
- Score the dough into four sections lengthwise, and 6 crosswise, to create 24 crackers.
- Bake for 25 minutes, until the crackers start to brown around the edges.
Notes
- When baking, you may want to remove the crackers around the outer edges of the pan first, separate the ones in the center, and bake them for a few minutes longer, to get a light brown on all of them.
