Today, I’ve been a vegan for one month.
I thought I’d celebrate by doing something like driving through Wendy’s for a burger, or picking up a roasted chicken, but I haven’t gone out at all today. Instead, I celebrated by fixing one of my favorite I-can’t-be-bothered meals: vegetable spring rolls.
I usually fill the spring roll wrappers with whatever is handy and/or needs to be used up. Today, it was shredded cabbage and carrots, spinach, some leftover baked tofu, and hoisin sauce. I put the sauce inside the roll to make it portable, and keep me from making a mess. Also, since it’s sugary, it limits my portion to a teaspoon per roll.
I think I’ll stick with the vegan thing for another month before I decide whether it’s a permanent change. I’ve been really run down this week, and I’m not sure if it’s what I’m eating, my allergies, or that I’m punishing my body by hauling 40lb sacks of compost, sand, and whatever else the garden needs. And then, there’s the digging, in the black clay that’s hardening into brick as the weather gets warmer. It’s brutal. Any one or all of these things could be contributing to my fatigue.
