My first attempt at a tofu scramble: silken tofu sauteed with onions, garlic and spinach, salt, pepper and a tiny bit of nutmeg. The soft tofu fell apart, and at first I was disappointed, but than I realized it sort of looked like cheese, and went with it. Poured over a pumpernickel sub roll. Delicious.
